- 1 cup long-grain rice
- 2 bell peppers, mixed colors

- 3 cups chicken broth

Instructions
- In a large skillet, heat olive oil over medium heat.
- Add sliced smoked sausage and cook until browned.
- Add diced onion and bell peppers, sauté until softened.
- Stir in minced garlic and cook for another minute.
- Add the rice and Cajun seasoning, stirring to combine.
- Pour in chicken broth, bring to a boil, then reduce heat and cover.
- Cook for 18-20 minutes or until rice is tender and liquid is absorbed.
- Fluff with a fork and serve hot.
