Ingredients
- – 8 oz (226 g) pasta (linguine or spaghetti)
- – 1 1/2 teaspoons (8 ml) smoked paprika
- – 3/4 teaspoons (4 ml) dried oregano
- – 3/4 teaspoons (4 ml) dried thyme
- – 1/2 teaspoon (3 ml) dried basil
- – 1/2 teaspoon (3 ml) garlic powder
- – 1/2 teaspoon (3 ml) onion powder
- – 3/8 teaspoon (2 ml) cayenne pepper (double this for a spicier dish)
- – 1/4 teaspoon (1 ml) ground black pepper
- – 1/2 teaspoon (3 ml) table salt plus more to taste
- – 1 lb (454 g) extra large shrimp, peeled, deveined, thawed, and patted dry (tails on or off)
- – 2 tablespoons (30 ml) olive oil
- – 2 tablespoons (30 ml) vegetable oil
- – 1 medium yellow onion (140 g), diced (about 1 cup)
- – 2 teaspoons (10 ml) minced garlic (2-3 cloves)
- – 1 tablespoon (15 ml) all-purpose flour
- – 3/4 cup (157 ml) vegetable broth
- – 14.5 oz (411 g) can fire-roasted tomatoes, drained
- – 3/4 cups (180 ml) coconut cream
- – 1/2 cup (50 g) freshly grated cheddar cheese plus additional for serving
Instructions
- Fill a large pot with water and season generously with salt. Bring it to a boil, then cook the pasta following the directions on its packaging. Once it’s done, drain the pasta and keep it warm. If it’s ready before needed, you can mix in a teaspoon of olive oil to stop it from sticking. While the pasta is cooking, get the shrimp ready.
- In a small bowl, mix together the paprika, oregano, thyme, basil, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Take out one teaspoon of this mixture and keep it aside for later use in the sauce.
- Place the shrimp in a big plastic bag and shake it with the cajun seasoning until they are completely covered.
- Heat olive oil in a large frying pan over medium-high heat. Once the oil is hot, cook the shrimp in portions. Move them to a plate once they are fully cooked.
- Turn the heat down to medium and add vegetable oil to the pan. When the oil is hot, add the diced onion and cook until it becomes soft, which should take around 3 to 5 minutes.
- Add the minced garlic and stir for about 30 seconds until you can smell the aroma.
- Sprinkle the flour and the reserved teaspoon of cajun spice over the onion and garlic mix, then stir until all the flour is absorbed.
- Slowly pour in the vegetable broth while stirring, scraping the pan bottom to loosen any browned bits. Let it cook until the broth has reduced by half.
- Stir in the drained fire-roasted tomatoes.
- Add the coconut cream and mix until well combined.
- Incorporate the cooked pasta and cheddar cheese, stirring until the pasta is coated and the cheese is melted. Return the shrimp to the pan, heat everything through, and serve with extra cheddar cheese if you like.
