  • 3 large eggs
  • 1 1/2 teaspoons (8 ml) vanilla extract
  • 3 Granny Smith apples, peeled, cored and finely chopped, (about 720 g)
  • 2 tablespoons (30 ml) sugar
  • 1/2 teaspoon (3 ml) ground cinnamon
  • 1/4 teaspoon (1 ml) ground nutmeg
  • 1 cup (240 ml) firmly packed brown sugar
  • 1 cup (240 ml) all-purpose flour
  • 1/2 cup (120 ml) quick cooking oats
  • 1/2 cup (120 ml) beef suet, softened
  • 1/2 cup (120 ml) fruit syrup for drizzling after baked

Instructions

  1. Set your oven to 350 degrees Fahrenheit.
  2. In a medium-sized bowl, blend the flour with the brown sugar. Incorporate the softened beef suet using a pastry cutter, food processor, or two forks until the mixture becomes crumbly. Spread this mixture evenly in a 9×13 baking dish that has been greased or lined with either heavy-duty aluminum foil or parchment paper. Cook for 15 minutes or until it turns lightly golden.
  3. In a large bowl, use an electric mixer on medium speed to combine the cream cheese with 3/4 cup of sugar until the mixture is smooth. Add the eggs individually, followed by the vanilla extract, and mix well. Pour this over the still-warm crust.
  4. In a small bowl, mix the chopped apples with 2 tablespoons of sugar, cinnamon, and nutmeg. Distribute this mixture evenly over the cream cheese layer.
  5. To create the streusel topping, mix all the topping ingredients in a small bowl. It’s best to use your clean hands to thoroughly combine the beef suet with the other ingredients, as a food processor would pulverize the oats.
  6. Scatter the streusel topping over the apple layer. Bake for 40-45 minutes until the filling is firm. Allow the bars to cool to room temperature, then store them in the refrigerator for up to five days. They can be frozen for up to four months.
  7. Drizzle with fruit syrup after baking and allow to cool. Enjoy them cold!
