Ingredients
Scale
- 1 package spice or carrot cake mix (regular size)
- 2 cups (473 ml) chopped peeled tart apples (about 2 medium)
- 20 caramel candies
- 3 tablespoons (45 ml) 2% milk
- 1 cup (237 ml) finely chopped pecans, toasted
- 12 wooden skewers (4–1/2 inch)
Instructions
- Heat your oven to 350°F. Place paper liners in 12 large muffin tins.
- Mix the cake batter as per the package instructions; stir in the apples gently. Fill the muffin tins to 75% capacity with the batter. Cook until a toothpick inserted in the middle emerges clean, approximately 20 minutes. Let them cool in the tins for 10 minutes before transferring to a wire rack to cool entirely.
- In a small pot, melt the caramel candies with the milk over low heat, stirring continuously until smooth. Coat the cupcakes with this caramel mixture. Scatter the pecans on top. Insert a wooden skewer into each cupcake.
Notes
- Toasting pecans before chopping enhances flavor and adds a delightful crunch to the cupcakes.
- Peel tart apples before chopping to avoid any bitterness in the cupcakes.
- When melting caramel candies, stir continuously over low heat for a smooth consistency and prevent burning.
