  • 1/4 cup (56g) unsalted butter
  • 1/2 cup (120ml) heavy whipping cream
  • 1/2 tbsp (8 ml) vanilla extract
  • 1/2 to 1 tsp (8 ml) salt
  • 3 Granny Smith apples, peeled and diced
  • 2 tsp (10 ml) lemon juice
  • 1/8 tsp (1 ml) nutmeg
  • 1 1/2 tsp (8 ml) cinnamon
  • 4 tbsp (56g) packed brown sugar
  • 1 cup (240ml) heavy whipping cream
  • 1/2 cup (58g) powdered sugar
  • 1 tsp (5 ml) ground cinnamon
  • 1 cup (240 ml) Cinnamon Granola

Instructions

  1. In a medium to large saucepan, mix together the granulated sugar and water. Heat over medium-low until the sugar is fully dissolved, which should take around 3 to 5 minutes.
  2. Introduce the butter and allow it to melt. Increase the heat to medium and bring the blend to a rolling boil.
  3. Avoid whisking at this stage to prevent crystallization. Let it simmer until it achieves a rich golden copper hue, approximately 10-15 minutes, though it might take longer depending on your stove. Watch closely, but do not stir. Occasionally tipping the pan from side to side can help ensure even cooking.
  4. Take the pan off the heat and carefully pour in the heavy whipping cream gradually. The caramel will foam up significantly, so proceed with caution. Whisk briskly and thoroughly as you incorporate the cream, continuing until well mixed.
  5. Stir in the vanilla extract and half a teaspoon of salt, mixing to combine. Adjust the salt to your preference.
  6. Let the caramel sauce cool down. It will be relatively thin initially, but will thicken upon cooling. Allow it to reach room temperature.
  7. If preparing the caramel sauce ahead of time, store it in an airtight container in the refrigerator for up to 2 weeks.
  8. Rinse and peel the apples. Cut them into small pieces.
  9. In a medium pan, combine the apple pieces with lemon juice, nutmeg, cinnamon, and brown sugar. Toss to coat evenly.
  10. Cook the apples over medium-low heat for about 10-15 minutes, or until they reach your desired softness. Let them cool for around 10-15 minutes.
  11. In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and cinnamon, then whip on high speed until stiff peaks form.
  12. Once all components are ready, assemble the trifles. Begin with an even layer of whipped cream at the bottom of 4 cups or jars.
  13. Layer with approximately 2 tablespoons of granola evenly.
  14. Pour around 1 tablespoon of caramel sauce over the granola.
  15. Add about 2 tablespoons of the apple mixture over the caramel.
  16. Repeat the layering process once more and then drizzle additional caramel on top of each trifle.
  17. These can be enjoyed immediately, but they taste best after setting in the fridge for 2-3 hours or until you’re ready to serve. Consume the trifles within 1-2 days, and store any leftovers in the refrigerator.
