- 4 boneless chicken thighs (680g)
- 2 tablespoons soy sauce (30ml)
- 1 tablespoon dark soy sauce (15ml)
- 1 tablespoon brown sugar (12g)
- 1 tablespoon honey (20g)
- 4 cloves garlic, minced
- 1 tablespoon (15 ml) fresh ginger, grated
- 1 tablespoon rice vinegar (15ml)
- 2 tablespoons vegetable oil (30ml)
- 2 cups chicken broth (480ml)
- 1 teaspoon sesame oil (5ml)
- 2 cups cooked white rice (400g)
- Chopped green onions, for garnish
- Sesame seeds, for garnish
Instructions
- Combine the soy sauces, brown sugar, honey, and rice vinegar in a bowl to create the marinade.
- Immerse the chicken thighs in this marinade for a minimum of 20 minutes.
- Warm vegetable oil in a skillet over medium-high heat. Cook the chicken thighs on each side until they are golden and fully cooked. Take them out and set them aside.
- Using the same skillet, add the minced garlic and grated ginger. Cook for 1-2 minutes until they release their aroma.
- Add chicken broth and sesame oil to the pan. Let it come to a gentle boil and reduce slightly.
- Cut the cooked chicken into slices and place them back into the broth to heat for an additional 2-3 minutes.
- Present the chicken and broth atop bowls of cooked white rice.
- Finish by sprinkling chopped green onions and sesame seeds on top.

- Marinate chicken thighs longer for a richer flavor, ideally overnight in the fridge.
- Slice cooked chicken thinly for even heating in the broth.
