- 1 cup (240 ml) grated apple (about 1 medium apple) (120 grams)
- 1 cup (240 ml) grated zucchini (about 1 medium zucchini) (130 grams)
- 1/2 cup (120 ml) chopped walnuts or pecans (optional) (60 grams)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In another bowl, combine the granulated sugar, brown sugar, and vegetable oil.
- Add the eggs and vanilla extract to the sugar mixture and mix until smooth.
- Stir the grated carrots, apple, and zucchini into the wet ingredients.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes.
- Remove from the pan and cool completely on a wire rack before slicing.
