  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1 cup (240 ml) grated carrots (about 2 medium carrots) (130 grams)
  • 1 cup (240 ml) grated apple (about 1 medium apple) (120 grams)
  • 1 cup (240 ml) grated zucchini (about 1 medium zucchini) (130 grams)
  • 1/2 cup (120 ml) chopped walnuts or pecans (optional) (60 grams)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9×5 inch loaf pan.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. In another bowl, combine the granulated sugar, brown sugar, and vegetable oil.
  5. Add the eggs and vanilla extract to the sugar mixture and mix until smooth.
  6. Stir the grated carrots, apple, and zucchini into the wet ingredients.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. If using, fold in the chopped walnuts or pecans.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
