  • 1/3 cup (80 ml) vegetable oil
  • 2 large eggs
  • 1 medium zucchini, grated and patted dry (about a cup)
  • 1 medium carrot, grated (a little less than a cup)

Instructions

  1. Set your oven to 350°F and prepare a loaf pan by coating it with nonstick spray; place it aside.
  2. In a medium-sized mixing bowl, combine the flour, baking powder, cinnamon, and salt by whisking them together; set this mixture aside.
  3. In a larger bowl, blend the sugar, yogurt, vegetable oil, and eggs until the mixture is uniform. Gradually incorporate the dry flour mixture, ensuring everything is well-mixed, and use a rubber spatula to clean the sides of the bowl. Gently mix in the grated zucchini and carrot.
  4. Transfer the batter into the greased loaf pan. Position the pan on the middle shelf of the oven and bake for approximately 60 minutes, or until a toothpick inserted into the bread comes out clean. Allow the bread to cool in the pan on a wire rack for 5 minutes, then carefully take it out of the pan and let it cool completely on the rack before slicing.
