- 1/3 cup (80 ml) vegetable oil
- 2 large eggs
- 1 medium zucchini, grated and patted dry (about a cup)
- 1 medium carrot, grated (a little less than a cup)
Instructions
- Set your oven to 350°F and prepare a loaf pan by coating it with nonstick spray; place it aside.
- In a medium-sized mixing bowl, combine the flour, baking powder, cinnamon, and salt by whisking them together; set this mixture aside.
- In a larger bowl, blend the sugar, yogurt, vegetable oil, and eggs until the mixture is uniform. Gradually incorporate the dry flour mixture, ensuring everything is well-mixed, and use a rubber spatula to clean the sides of the bowl. Gently mix in the grated zucchini and carrot.
- Transfer the batter into the greased loaf pan. Position the pan on the middle shelf of the oven and bake for approximately 60 minutes, or until a toothpick inserted into the bread comes out clean. Allow the bread to cool in the pan on a wire rack for 5 minutes, then carefully take it out of the pan and let it cool completely on the rack before slicing.
