- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2 ½ cups biscuit mix
- 1 cup water
- Cooking spray
- ½ cup sour cream
- ½ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1 ½ cups shredded cheddar cheese, divided
- 1 teaspoon garlic powder
- ½ cup mild salsa
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook until no longer pink, then drain excess fat.
- In a medium bowl, combine biscuit mix and water. Stir until mixed, then press into a greased 9 x 13-inch casserole dish. Bake at 350°F for 5-8 minutes until set and golden.
- Add chopped onions and bell pepper to the skillet with the beef. Cook for about 4 minutes until tender, then add taco seasoning and mix well.
- Spread the beef mixture on top of the baked biscuit layer.
- In a medium bowl, mix together sour cream, mayonnaise, green chiles, ¾ cup shredded cheese, and garlic powder. Spread this over the beef layer.
- Add spoonfuls of salsa on top without spreading, then sprinkle remaining cheese.
- Bake uncovered for 30 minutes until hot and bubbly.
