Description

A hearty casserole combining lean ground beef, vibrant vegetables, a cheesy topping, and biscuit mix, perfect for family dinners and gatherings.


Ingredients

  • 1.5 pounds lean ground beef
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2 ½ cups biscuit mix
  • 1 cup water
  • Cooking spray
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1 ½ cups shredded cheddar cheese, divided
  • 1 teaspoon garlic powder
  • ½ cup mild salsa

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook until no longer pink, then drain excess fat.
  2. In a medium bowl, combine biscuit mix and water. Stir until mixed, then press into a greased 9 x 13-inch casserole dish. Bake at 350°F for 5-8 minutes until set and golden.
  3. Add chopped onions and bell pepper to the skillet with the beef. Cook for about 4 minutes until tender, then add taco seasoning and mix well.
  4. Spread the beef mixture on top of the baked biscuit layer.
  5. In a medium bowl, mix together sour cream, mayonnaise, green chiles, ¾ cup shredded cheese, and garlic powder. Spread this over the beef layer.
  6. Add spoonfuls of salsa on top without spreading, then sprinkle remaining cheese.
  7. Bake uncovered for 30 minutes until hot and bubbly.
