Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 packet taco seasoning
  • 3 cups tortilla chips
  • 2 cups shredded cheese
  • Sour cream, for serving
  • Green onions, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef with the onion, bell pepper, and garlic until the meat is cooked through. Drain any excess fat.
  3. Stir in the diced tomatoes, black beans, corn, and taco seasoning. Simmer for 5-10 minutes.
  4. In a casserole dish, layer half of the tortilla chips on the bottom.
  5. Spoon half of the beef mixture over the chips, followed by half of the shredded cheese.
  6. Repeat the layering with the remaining chips, beef mixture, and cheese.
  7. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.
  8. Serve with sour cream and green onions on top.

Notes

For a spicier kick, add jalapeños or hot sauce. For a healthier version, substitute ground turkey or chicken.
