- 1 lb ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 can black beans, rinsed and drained
- 1 cup corn
- 1 packet taco seasoning
- 3 cups tortilla chips
- 2 cups shredded cheese
- Sour cream, for serving
- Green onions, for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef with the onion, bell pepper, and garlic until the meat is cooked through. Drain any excess fat.
- Stir in the diced tomatoes, black beans, corn, and taco seasoning. Simmer for 5-10 minutes.
- In a casserole dish, layer half of the tortilla chips on the bottom.
- Spoon half of the beef mixture over the chips, followed by half of the shredded cheese.
- Repeat the layering with the remaining chips, beef mixture, and cheese.
- Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.
- Serve with sour cream and green onions on top.
Notes
For a spicier kick, add jalapeños or hot sauce. For a healthier version, substitute ground turkey or chicken.
