Ingredients

- 1 head of cauliflower
- 1 onion
- 2 cloves of garlic
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil
- Optional: chives or parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened.
- Chop the cauliflower into florets and add to the pot, stirring for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer until cauliflower is tender, about 15 minutes.
- Use an immersion blender to puree the soup until smooth or transfer to a blender in batches.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with chives or parsley if desired.
Notes
For added richness, roast the cauliflower before adding it to the pot. Store leftovers in an airtight container in the fridge for up to three days.
