- ½ cup + 2 Tbsp dark brown sugar (or light brown sugar)

- ⅛ tsp black pepper (optional)
- 1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp water, rested 5–10 mins)
- 1 tsp vanilla bean paste or vanilla extract
- 1 cup + 2 Tbsp all-purpose flour
- ¼ tsp salt
- ½ tsp baking soda
- 2 Tbsp granulated sugar (optional, for rolling)
Instructions
- Cream the vegan butter, brown sugar, and spices together until fluffy and fragrant.
- Add the prepared flax egg and vanilla to the mixture, whipping for an additional 30 seconds to incorporate.
- Sift flour, baking soda, and salt together, then gradually mix into the dough until combined.
- Chill the dough in a covered bowl for one hour to firm up.
- Preheat the oven to 350°F and line a baking tray with parchment paper. If you’re rolling the cookies in sugar, prepare a small bowl of granulated sugar.
- Scoop 10–12 dough balls, approximately 45–50 g each. Roll each ball in sugar if desired.
- Space the dough balls 2 inches apart on the tray without flattening them.
- Bake for 11–13 minutes, watching for browned edges and soft centers.
- Immediately tap the tray on the counter to create crinkles.
- Optionally use a round cookie cutter to shape while warm.
- Cool the cookies on the tray for 5–10 minutes before transferring to a wire rack.
Notes
For enhanced flavor, consider letting the dough chill overnight. Adjusting spice quantities can create a customized cookie to suit your taste.
