These chai cookies combine the comforting aroma of spices with a soft, chewy texture, providing a delightful taste that captures the essence of traditional chai.


Ingredients

  • ½ cup vegan butter (preferably Earth Balance sticks)
  • ½ cup + 2 Tbsp dark brown sugar (or light brown sugar)
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom
  • ¼ tsp ground ginger
  • ⅛ tsp star anise (optional)
  • ⅛ tsp black pepper (optional)
  • 1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp water, rested 510 mins)
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 cup + 2 Tbsp all-purpose flour
  • ¼ tsp salt
  • ½ tsp baking soda
  • 2 Tbsp granulated sugar (optional, for rolling)

Instructions

  1. Cream the vegan butter, brown sugar, and spices together until fluffy and fragrant.
  2. Add the prepared flax egg and vanilla to the mixture, whipping for an additional 30 seconds to incorporate.
  3. Sift flour, baking soda, and salt together, then gradually mix into the dough until combined.
  4. Chill the dough in a covered bowl for one hour to firm up.
  5. Preheat the oven to 350°F and line a baking tray with parchment paper. If you’re rolling the cookies in sugar, prepare a small bowl of granulated sugar.
  6. Scoop 10–12 dough balls, approximately 45–50 g each. Roll each ball in sugar if desired.
  7. Space the dough balls 2 inches apart on the tray without flattening them.
  8. Bake for 11–13 minutes, watching for browned edges and soft centers.
  9. Immediately tap the tray on the counter to create crinkles.
  10. Optionally use a round cookie cutter to shape while warm.
  11. Cool the cookies on the tray for 5–10 minutes before transferring to a wire rack.

Notes

For enhanced flavor, consider letting the dough chill overnight. Adjusting spice quantities can create a customized cookie to suit your taste.
