  • 1 cup (240 ml) whole milk
  • 3 tbs. brown sugar
  • 2 1/4 tsp (11 ml). active dry yeast
  • 3 1/24 cup (720 ml) s all purpose flour
  • 2 1/2 tsp (13 ml). salt
  • 1/4 cup (60 ml) softened butter
  • 1 1/2 cup (360 ml) s shredded cheddar cheese
  • 56 cloves garlic finely chopped
  • 1/4 cup (60 ml) softened butter
  • 1/4 tsp (1 ml). salt
  • 1/4 cup (60 ml) fresh chopped herbs
  • 3 tbs. melted butter

Instructions

  1. In a microwave-safe container, warm the water, milk, and brown sugar until the temperature reaches between 110-115 degrees using a thermometer. Mix in the active dry yeast, then let it sit for approximately 5 minutes until it becomes bubbly and foamy.
  2. Pour the yeast mixture into the bowl of a stand mixer or a large mixing bowl. Add three cups of flour and the salt, using the paddle attachment to combine. The mixture should be quite soft and sticky at this stage.
  3. Add an additional 1/4 cup of flour, continuing to incorporate 1/4 cup portions until the dough starts detaching from the sides but remains attached to the bottom. Knead for about 5 minutes until the dough appears slightly smooth, then gradually incorporate the softened butter.
  4. Continue to knead the dough by hand or with a mixer until it becomes elastic. If kneading manually, this will take about 15 minutes, while using a mixer should take around 10 minutes. The dough should be smooth and stretchy.
  5. Move the dough to a large bowl that has been lightly greased, and cover it with plastic wrap. Allow the dough to rise by about one-third in size, which should take 30-45 minutes, but keep an eye on it to prevent over-proofing.
  6. Prepare an 8 or 9 inch loaf pan by greasing it, then set it aside. Shape the dough into a large rectangle. In a separate small bowl, mix the garlic, herbs, and softened butter until just combined and spread this mixture evenly over the dough. Sprinkle the cheese evenly on top of the butter mixture and press lightly to stick to the dough. Cut the dough into squares that match the width of your loaf pan and stack them gently in the pan. Cover with plastic wrap.
  7. Preheat the oven to 375 degrees. Allow the dough to rest for about 30 minutes until it has puffed slightly. Generously brush the top of the loaf with some melted butter, then bake for 45-50 minutes until the dough turns a deep golden brown. Ensure the internal temperature reaches 175 degrees using a thermometer.
  8. Immediately after removing the loaf from the oven, brush the remaining melted butter over the top. Let it cool in the pan for about 20 minutes, then turn it out onto a cooling rack to finish cooling. Wait until the bread is completely cool before slicing. Enjoy!
