A comforting cheeseburger casserole made with ground beef, pasta, and melted cheddar cheese.

- 1 pound ground beef
- 1 onion, diced
- 1 cup uncooked pasta (elbow or shells)
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes (canned or fresh)
- 2 tablespoons ketchup
- 1 tablespoon mustard
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef and onion over medium heat until the beef is fully cooked. Drain excess fat.
- Stir in the uncooked pasta, beef broth, diced tomatoes, ketchup, mustard, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for about 15-20 minutes, or until the pasta is tender.
- Remove from heat and stir in the shredded cheddar cheese until melted and combined.
- Serve warm.
Notes
For added flavor, consider using a combination of cheeses. Avoid overcooking the pasta to maintain a pleasing texture.
