  • 1 medium onion, diced finely
  • 1 teaspoon salt
  • ½ (15 oz) can petite diced tomatoes
  • 2 cups water
  • 3 beef bouillon cubes
  • 2 cups large elbow macaroni, dried
  • 1 cup sour cream
  • ¼ cup whole milk
  • 1.5 cups mozzarella cheese, shredded
  • 1.5 cups cheddar cheese, shredded
  • 1 tablespoon dried parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat, draining excess grease.
  3. Add the diced onion and salt, sauté until the onions soften (about 5 minutes).
  4. Stir in the petite diced tomatoes and prepared broth.
  5. Add the elbow macaroni, cover, and let it simmer for 10 minutes until tender.
  6. Mix in sour cream and whole milk until fully combined.
  7. Layer half of the beef mixture in a greased 9×13 baking dish, topping with half of the shredded cheese.
  8. Repeat with the remaining beef mixture and cheese.
  9. Bake for 10 minutes or until the cheese is melted and bubbly.
  10. Garnish with dried parsley before serving.
