- 1 lb lean ground beef
- 1 medium onion, diced finely
- 1 teaspoon salt
- ½ (15 oz) can petite diced tomatoes
- 2 cups water
- 3 beef bouillon cubes
- 2 cups large elbow macaroni, dried
- 1 cup sour cream
- ¼ cup whole milk
- 1.5 cups mozzarella cheese, shredded
- 1.5 cups cheddar cheese, shredded
- 1 tablespoon dried parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, cook the ground beef over medium heat, draining excess grease.
- Add the diced onion and salt, sauté until the onions soften (about 5 minutes).
- Stir in the petite diced tomatoes and prepared broth.
- Add the elbow macaroni, cover, and let it simmer for 10 minutes until tender.
- Mix in sour cream and whole milk until fully combined.
- Layer half of the beef mixture in a greased 9×13 baking dish, topping with half of the shredded cheese.
- Repeat with the remaining beef mixture and cheese.
- Bake for 10 minutes or until the cheese is melted and bubbly.
- Garnish with dried parsley before serving.
