- 1/2 cup Shredded Parmesan Cheese (Pecorino Romano as a substitute)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced yellow onion, sautéing until translucent and tender.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef to the pot. Break it apart with a spoon, cooking until browned and cooked through.
- Sprinkle in the flour and mix well to combine, allowing it to cook for another minute.
- Gradually pour in the chicken broth while stirring continuously, ensuring there are no lumps.
- Stir in the heavy cream, then add the matchstick carrots, uncooked macaroni noodles, and seasonings—salt, pepper, onion powder, Italian seasoning, and paprika.
- Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cook for about 10-12 minutes, or until the macaroni is tender.
- Remove from heat and stir in the shredded cheddar and parmesan cheeses until melted and creamy.
Notes
Let the soup sit for a few minutes after cooking to enhance the flavors. Adjust seasonings to taste.
