Description

A warm and hearty cheeseburger soup that combines classic flavors into a comforting bowl, perfect for chilly nights.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Optional: diced tomatoes, pickles, and mustard for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the diced onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  3. Pour in the beef broth and add the diced potatoes. Bring to a boil and then reduce to a simmer.
  4. Cook until the potatoes are tender, about 15-20 minutes.
  5. Stir in the heavy cream and cheddar cheese until melted and mixed well.
  6. Add the crumbled bacon and season with salt and pepper to taste.
  7. Serve hot, optionally garnished with diced tomatoes, pickles, and mustard.

Notes

Using a high-quality beef broth boosts flavor. Adjust the thickness of the soup by adding more or less broth as desired.
