- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- Salt and pepper to taste
- Optional: diced tomatoes, pickles, and mustard for garnish
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the diced onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Pour in the beef broth and add the diced potatoes. Bring to a boil and then reduce to a simmer.
- Cook until the potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and cheddar cheese until melted and mixed well.
- Add the crumbled bacon and season with salt and pepper to taste.
- Serve hot, optionally garnished with diced tomatoes, pickles, and mustard.
Notes
Using a high-quality beef broth boosts flavor. Adjust the thickness of the soup by adding more or less broth as desired.
