A hearty and comforting soup that combines the classic flavors of a cheeseburger with tender vegetables and rich cheddar cheese.

- 1 pound lean ground beef
- Kosher salt and pepper, to taste
- 1 tablespoon olive oil
- 1 sweet onion, diced
- 1 cup freshly grated carrots
- 1 cup diced celery
- 4 garlic cloves, minced
- ½ teaspoon dried oregano
- 1 pound petite gold potatoes, quartered
- 4 to 5 cups chicken stock
- 2 tablespoons unsalted butter
- 3 tablespoons flour
- 1 cup milk
- 16 ounces freshly grated sharp cheddar cheese
- ½ cup sour cream
- Freshly chopped chives, for serving
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the ground beef, seasoning with kosher salt and pepper. Cook until browned.
- Remove the beef from the pot and set aside.
- In the same pot, add the diced onion, grated carrots, and diced celery. Cook for about 5–7 minutes until softened.
- Stir in minced garlic and dried oregano. Cook for an additional minute to infuse the flavors.
- Return the browned beef to the pot.
- Add quartered petite gold potatoes and pour in chicken stock.
- Bring the mixture to a boil, then reduce the heat and let it simmer until potatoes are tender, roughly 15-20 minutes.
- While the soup simmers, melt butter in a separate small saucepan over medium heat.
- Stir in flour and continue cooking for 1–2 minutes until combined.
- Gradually whisk in the milk, cooking until thickened.
- Remove from heat and stir in freshly grated cheddar cheese until smoothly melted.
- Combine the cheese sauce into the simmering soup, then add the sour cream, stirring until smooth. Adjust seasoning with salt and pepper to taste.
- Ladle the soup into bowls and garnish with freshly chopped chives before serving.
Notes
For a thicker soup, mash some of the potatoes against the side of the pot. Using freshly grated cheese ensures a smooth consistency.
