Description

A hearty and comforting soup that combines the classic flavors of a cheeseburger with tender vegetables and rich cheddar cheese.


Ingredients

  • 1 pound lean ground beef
  • Kosher salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 1 cup freshly grated carrots
  • 1 cup diced celery
  • 4 garlic cloves, minced
  • ½ teaspoon dried oregano
  • 1 pound petite gold potatoes, quartered
  • 4 to 5 cups chicken stock
  • 2 tablespoons unsalted butter
  • 3 tablespoons flour
  • 1 cup milk
  • 16 ounces freshly grated sharp cheddar cheese
  • ½ cup sour cream
  • Freshly chopped chives, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the ground beef, seasoning with kosher salt and pepper. Cook until browned.
  3. Remove the beef from the pot and set aside.
  4. In the same pot, add the diced onion, grated carrots, and diced celery. Cook for about 5–7 minutes until softened.
  5. Stir in minced garlic and dried oregano. Cook for an additional minute to infuse the flavors.
  6. Return the browned beef to the pot.
  7. Add quartered petite gold potatoes and pour in chicken stock.
  8. Bring the mixture to a boil, then reduce the heat and let it simmer until potatoes are tender, roughly 15-20 minutes.
  9. While the soup simmers, melt butter in a separate small saucepan over medium heat.
  10. Stir in flour and continue cooking for 1–2 minutes until combined.
  11. Gradually whisk in the milk, cooking until thickened.
  12. Remove from heat and stir in freshly grated cheddar cheese until smoothly melted.
  13. Combine the cheese sauce into the simmering soup, then add the sour cream, stirring until smooth. Adjust seasoning with salt and pepper to taste.
  14. Ladle the soup into bowls and garnish with freshly chopped chives before serving.

Notes

For a thicker soup, mash some of the potatoes against the side of the pot. Using freshly grated cheese ensures a smooth consistency.
