Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 can diced tomatoes (undrained)
  • 2 cups shredded cheddar cheese
  • 1 bag frozen tater tots
  • 1 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef and onions over medium heat until the meat is cooked through. Drain excess fat.
  3. Stir in the taco seasoning and diced tomatoes.
  4. In a greased casserole dish, spread the beef mixture evenly at the bottom.
  5. Combine sour cream and half of the cheddar cheese in a bowl, then spread that mixture over the beef.
  6. Top with the frozen tater tots, placing them in a single layer.
  7. Sprinkle remaining cheddar cheese on top.
  8. Bake for 30-35 minutes until the tater tots are golden brown and the cheese is bubbly.
  9. Let it cool slightly before serving.
