- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 can diced tomatoes (undrained)
- 2 cups shredded cheddar cheese
- 1 bag frozen tater tots
- 1 cup sour cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef and onions over medium heat until the meat is cooked through. Drain excess fat.
- Stir in the taco seasoning and diced tomatoes.
- In a greased casserole dish, spread the beef mixture evenly at the bottom.
- Combine sour cream and half of the cheddar cheese in a bowl, then spread that mixture over the beef.
- Top with the frozen tater tots, placing them in a single layer.
- Sprinkle remaining cheddar cheese on top.
- Bake for 30-35 minutes until the tater tots are golden brown and the cheese is bubbly.
- Let it cool slightly before serving.
