Description

A comforting skillet dish featuring chicken, colorful bell peppers, and melty cheese, perfect for a quick and delicious meal.

Ingredients

Scale
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cups shredded cheese (like cheddar or Monterey Jack)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Cooked rice or tortillas for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken and cook until browned and fully cooked, about 5-7 minutes.
  2. Add the sliced red and yellow bell peppers along with the sliced onion. Cook until the vegetables soften, about 4-5 minutes.
  3. Sprinkle in garlic powder, chili powder, salt, and pepper. Mix well.
  4. Add shredded cheese on top, cover the skillet, and let the cheese melt.
  5. Serve the cheesy mixture over cooked rice or inside warm tortillas.

Notes

For extra flavor, consider marinating the chicken in olive oil, garlic, and chili powder for a few hours beforehand.
