Ingredients
- – 3 medium zucchini (or 2 zucchini and 1 yellow squash), grated
- – 2/3 cup (160 ml) panko breadcrumbs
- – 1/2 cup (50 g) sharp cheddar cheese, finely grated
- – 2 eggs
- – 1 tsp (5 ml) cornstarch
- – 3/4 tsp (4 ml) kosher sea salt
- – 1/2 teaspoon (2.5 ml) garlic powder
- – 1/4 tsp (1.25 ml) onion powder
- – 1/4 tsp (1.25 ml) ground black pepper
- – 1/8 tsp (0.6 ml) dried parsley
- – 1/8 tsp (0.6 ml) paprika
- – vegetable oil
Instructions
- Preheat your oven to 425°F (220°C). Coat a standard cookie sheet with a generous layer of nonstick spray or oil, such as avocado or grapeseed oil.
- Place the grated zucchini in a fine colander over the sink and squeeze out as much moisture as you can. This might take about 5 minutes.
- Move the zucchini to a large bowl. Add the breadcrumbs, cheese, eggs, cornstarch, salt, garlic powder, onion powder, pepper, parsley, and paprika. Stir everything together with a large spatula until well mixed.
- Measure out the zucchini mixture with a tablespoon, shaping it into small tot forms. Arrange them on the oiled baking sheet and lightly coat the tops with oil.
- Slide the tray into the oven and bake until the tots are golden and crispy, approximately 18-22 minutes. Enjoy them right away with your choice of dip like ketchup, marinara, or ranch dressing.
