- 1 pound ground beef
- 1 large yellow onion (about 1 ½ cups finely diced)
- 2 cloves garlic (minced)
- 4 cups beef broth
- 3 Yukon Gold potatoes (diced)
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 cup shredded mild cheddar cheese
- 1 cup heavy whipping cream
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Heat a large pot over medium heat, add ground beef and yellow onions, and cook until the beef is browned (about 8-10 minutes). Drain excess grease.
- Add minced garlic and cook for 1 additional minute.
- Stir in beef broth, diced potatoes, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
- Gradually stir in shredded cheddar cheese until melted and smooth.
- Pour in heavy whipping cream and stir well, heating through for 3-5 minutes.
- Mix cornstarch with water to create a slurry, then slowly add to the soup while stirring. Allow to thicken for 2-3 minutes.
Notes
Adjust seasoning to taste. For a thicker soup, increase the cornstarch slurry. For freezer storage, add dairy before reheating after thawing.
