  • 1 large yellow onion (about 1 ½ cups finely diced)
  • 2 cloves garlic (minced)
  • 4 cups beef broth
  • 3 Yukon Gold potatoes (diced)
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup shredded mild cheddar cheese
  • 1 cup heavy whipping cream
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Heat a large pot over medium heat, add ground beef and yellow onions, and cook until the beef is browned (about 8-10 minutes). Drain excess grease.
  2. Add minced garlic and cook for 1 additional minute.
  3. Stir in beef broth, diced potatoes, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
  4. Gradually stir in shredded cheddar cheese until melted and smooth.
  5. Pour in heavy whipping cream and stir well, heating through for 3-5 minutes.
  6. Mix cornstarch with water to create a slurry, then slowly add to the soup while stirring. Allow to thicken for 2-3 minutes.

Notes

Adjust seasoning to taste. For a thicker soup, increase the cornstarch slurry. For freezer storage, add dairy before reheating after thawing.
