Description
A rich, hearty soup filled with ground beef, potatoes, and creamy cheddar cheese, perfect for chilly nights.
Ingredients
Scale
- 1 pound ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cups beef broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, brown the ground beef and onion over medium heat. Drain excess fat.
- Add diced potatoes and beef broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in the heavy cream and cheddar cheese until melted and well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley and additional cheese if desired.
Notes
Consider adding a mix of cheeses for added depth. For a thicker consistency, mash some potatoes directly in the pot.
