Ingredients
- – 2 large tortillas (regular or low-carb/high-protein)
- – 7 oz (200g) cooked beef, chopped (rotisserie is great)
- – 2 garlic cloves, minced or grated (adjust to taste)
- – 2 tablespoons (30 ml) light mayonnaise
- – 1 tablespoon (15 ml) light Greek yogurt or plain yogurt
- – 2 teaspoons (10 ml) hot sauce like Frank’s
- – 1/4 teaspoon (1 ml) salt
- – 3 oz (90g) grated cheese (I used a cheddar blend)
- – 1 green onion, chopped
- – Vegetable oil spray
Instructions
- In a bowl, combine the chopped beef, garlic, mayonnaise, yogurt, hot sauce, and salt thoroughly.
- Lay a tortilla flat. On the bottom third, scatter around 2 tablespoons of cheese, then layer with approximately ⅔ cup of the beef mixture. Add another tablespoon of cheese and a sprinkle of chopped green onion.
- Bring the sides of the tortilla inward, then roll it up tightly starting from the bottom.
- Preheat a non-stick skillet over medium-high heat. Lightly coat with vegetable oil spray.
- Place the wraps with the seam facing down in the skillet. Cook for 3–4 minutes on each side until crispy and golden brown. Cover with a lid to ensure the inside is heated.
- Cut in half and enjoy!
