- 2 cups diced potatoes
- 1 cup diced ham
- 1 onion, chopped
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced potatoes and ham to the pot. Stir to combine.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are cooked, stir in the milk and shredded cheddar cheese.
- Continue to cook on low heat, stirring until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.

Notes
For extra flavor, consider adding garlic while sautéing the onions. To thicken the soup, blend a portion with an immersion blender.
