- 4 medium russet potatoes (peeled and diced)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 4 cups low-sodium beef broth
- 2 cups shredded sharp cheddar cheese
- 1 cup milk or heavy cream
- Salt & pepper (to taste)
Instructions
- Brown the ground beef in a large pot over medium heat, breaking it apart with a spatula and draining excess fat.
- Add the chopped onion and minced garlic, sauté for 3-4 minutes until fragrant and onions are translucent.
- Stir in the diced potatoes and pour in the beef broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Lower the heat and mix in shredded cheddar cheese and milk (or cream). Simmer for another 5 minutes while stirring until cheese is melted and creamy.
