Description
A comforting and hearty soup made with ground beef, tender potatoes, and creamy cheddar cheese, perfect for chilly evenings.
Ingredients
Scale
- 1 pound ground beef
- 4 cups diced potatoes (about 4 medium potatoes)
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- Salt and pepper, to taste
- Optional toppings: chopped green onions, crispy turkey bacon bits, additional shredded cheese
Instructions
- In a large pot, heat a tablespoon of butter over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Add the diced onion and minced garlic to the pot. Sauté for another 3-4 minutes until the onion becomes translucent and fragrant.
- Stir in the diced potatoes, ensuring they mix well with the beef and aromatics.
- Add the chicken broth, bringing the mixture to a gentle boil. Once boiling, reduce the heat to simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.
- In a separate bowl, whisk together the milk, flour, and remaining butter. Slowly add this mixture to the soup, stirring continuously until it thickens slightly.
- Mix in the shredded cheddar cheese until melted. Season with salt and pepper to taste, adjusting based on preference.
- Ladle the soup into bowls, garnishing with optional toppings like green onions or crispy turkey bacon bits.
Notes
For a creamier soup, use freshly shredded cheese instead of pre-shredded. Feel free to customize with additional vegetables or different cheese varieties.
