Description

Delightful Hasselback potatoes loaded with melted cheese and a buttery garlic combination, perfect for sharing at gatherings.


Ingredients

  • 6 medium russet potatoes (about 2 ½ lbs. total)
  • 6 tablespoons butter, melted
  • 2 tablespoons oil (olive or avocado)
  • 2 cloves garlic, crushed
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 6 ounces sliced cheddar cheese (cut into 1-inch squares)
  • 4 ounces cooked bacon, crumbled
  • Sour cream (optional)
  • Green onions (optional)

Instructions

  1. Preheat your oven to 425°F.
  2. Wash the potatoes thoroughly and dry them with a clean towel.
  3. Place two chopsticks on a cutting board and set one potato in between them.
  4. Slice approximately ⅛-¼ inch apart, stopping when your knife hits the chopsticks. Repeat for all potatoes.
  5. Place potatoes on a parchment paper-lined baking sheet.
  6. Whisk together the melted butter, oil, garlic, salt, and pepper in a medium-sized bowl.
  7. Use a pastry brush to apply half of this mixture over the potatoes.
  8. Spread the potato slices apart gently using your fingers or a fork to ensure the sauce gets in between the pieces.
  9. Cover the baking sheet with aluminum foil and bake for 30 minutes.
  10. Brush the remaining sauce over the potatoes and return them to bake uncovered for an additional 20-25 minutes.
  11. Once cooked through, remove the potatoes from the oven and let them cool slightly to touch.
  12. Insert a 1-inch square of cheese between each slice of potato.
  13. Return the potatoes to the oven for 5-10 minutes or until the cheese melts and bubbles.
  14. Serve your Cheesy Hasselback Potatoes with crumbled bacon on top. Garnish with optional sour cream and green onions for added flavor and texture. Enjoy!
