- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 cup mashed potatoes
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked bacon, crumbled
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, onion, garlic, Worcestershire sauce, salt, and pepper until well combined.
- Press the meat mixture into a greased baking dish to form an even layer.
- Spread a layer of mashed potatoes on top of the meatloaf mixture.
- Sprinkle the shredded cheese and crumbled bacon on top of the mashed potatoes.
- Bake for 30-35 minutes, or until the cheese is bubbly and golden.
- Let it cool slightly before slicing.
- Garnish with chopped parsley and serve.
Notes
For added flavor, consider mixing in fresh herbs like thyme or rosemary. Leftover mashed potatoes work well for this recipe.
