Ingredients

  • 1/2 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked bacon, crumbled
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, onion, garlic, Worcestershire sauce, salt, and pepper until well combined.
  3. Press the meat mixture into a greased baking dish to form an even layer.
  4. Spread a layer of mashed potatoes on top of the meatloaf mixture.
  5. Sprinkle the shredded cheese and crumbled bacon on top of the mashed potatoes.
  6. Bake for 30-35 minutes, or until the cheese is bubbly and golden.
  7. Let it cool slightly before slicing.
  8. Garnish with chopped parsley and serve.

Notes

For added flavor, consider mixing in fresh herbs like thyme or rosemary. Leftover mashed potatoes work well for this recipe.
