- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup milk
- 2 green onions, chopped
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika (optional)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a muffin tin.
- In a large bowl, mix the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, green onions, garlic powder, and optional smoked paprika. Add salt and pepper to taste and mix until smooth and creamy.
- Fill each muffin cup three-quarters full with the potato mixture, ensuring even distribution.
- Bake in the preheated oven for 20-25 minutes, until the tops are golden brown and the puffs are set.
- Allow to cool slightly before removing from the muffin tin and serve warm.
Notes
