  • 3 large eggs, beaten
  • 1 cup (240 ml) grated cheese, such as Parmesan or Gruyère, divided
  • 1/4 cup (60 ml) minced fresh chives
  • 1/4 cup (60 ml) diced cooked beef or turkey bacon or beef ham (optional )
  • Kosher salt
  • Freshly ground black pepper
  • Sour cream, for serve (optional )

Instructions

  1. Position an oven rack in the center and preheat to 400°F. Lightly grease the wells of a mini-muffin tray with cooking spray or oil.
  2. In a large mixing bowl, combine the mashed potatoes, beaten eggs, 3/4 cup of grated cheese, chives, and optional diced beef or turkey bacon. Mix until well-blended. Add salt and pepper to taste, depending on the initial seasoning of your mashed potatoes.
  3. Spoon the potato mixture into each muffin cup, filling them completely. Sprinkle the remaining 1/4 cup of cheese evenly over the tops.
