- 2 cup (480 ml) s cooked mashed potatoes
- 3 large eggs, beaten
- 1 cup (240 ml) grated cheese, such as Parmesan or Gruyère, divided
- 1/4 cup (60 ml) minced fresh chives
- 1/4 cup (60 ml) diced cooked beef or turkey bacon or beef ham (optional )
- Kosher salt
- Freshly ground black pepper
- Sour cream, for serve (optional )
Instructions
- Position an oven rack in the center and preheat to 400°F. Lightly grease the wells of a mini-muffin tray with cooking spray or oil.
- In a large mixing bowl, combine the mashed potatoes, beaten eggs, 3/4 cup of grated cheese, chives, and optional diced beef or turkey bacon. Mix until well-blended. Add salt and pepper to taste, depending on the initial seasoning of your mashed potatoes.
- Spoon the potato mixture into each muffin cup, filling them completely. Sprinkle the remaining 1/4 cup of cheese evenly over the tops.
- Bake until the potato bites are firm, golden on top, and thoroughly heated, approximately 20 minutes. Allow them to cool in the tray for about 5 minutes, then gently loosen them using a spoon or knife. Serve right away, optionally with spoonfuls of sour cream.
