- 2 cup (480 ml) s cold leftover mashed potatoes
- 1/4 cup (60 ml) all-purpose flour see note
- 2 large eggs
- 1/2 cup (120 ml) shredded cheddar cheese
- 1 tbsp (15 ml) chopped chives
Instructions
- Place the mashed potatoes, flour, and eggs into a large bowl and blend until the mixture is uniform and smooth. Fold in the shredded cheddar and chopped chives.
- Coat the waffle iron with a spray of cooking oil and preheat to a high temperature (I set mine to the maximum level). Spoon 1/2 cup of the potato mixture into the center of the waffle iron, then close the lid. Cook until the waffles achieve a golden-brown color and a slight crispiness. Continue this process with the remaining batter. For mini waffles, use 1/4 cup of batter instead of 1/2 cup.
