- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup diced vegetables (bell peppers, spinach, onions, etc.)
- Salt and pepper to taste
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or oil.
- Whisk together the eggs and cottage cheese in a mixing bowl until well combined.
- Stir in the shredded cheese, diced vegetables, salt, and pepper.
- Pour the egg mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Allow to cool slightly before removing from the muffin tin.
- Serve warm or store in the refrigerator for meal prep.
