Ingredients

  • 2 medium potatoes, diced
  • 4 large eggs
  • 1 cup cheddar cheese, shredded
  • Optional: 1/2 cup ham or bacon, diced
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter
  • Chives or green onions for garnish

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add diced potatoes and cook until golden and tender, about 10-15 minutes, stirring occasionally.
  3. In a bowl, whisk together the eggs, salt, and pepper.
  4. Push the potatoes to the side of the skillet and pour the eggs into the center.
  5. Stir gently to scramble the eggs, mixing with the potatoes as they cook.
  6. Once the eggs are cooked to your liking, add in the cheese and optional ham or bacon and stir until the cheese is melted.
  7. Serve hot, garnished with chives or green onions.

Notes

Use Yukon Gold or Russet potatoes for best results. Experiment with different cheeses for variety.
