- 2 medium potatoes, diced
- 4 large eggs
- 1 cup cheddar cheese, shredded
- Optional: 1/2 cup ham or bacon, diced
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
- Chives or green onions for garnish
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add diced potatoes and cook until golden and tender, about 10-15 minutes, stirring occasionally.
- In a bowl, whisk together the eggs, salt, and pepper.
- Push the potatoes to the side of the skillet and pour the eggs into the center.
- Stir gently to scramble the eggs, mixing with the potatoes as they cook.
- Once the eggs are cooked to your liking, add in the cheese and optional ham or bacon and stir until the cheese is melted.
- Serve hot, garnished with chives or green onions.
Notes
Use Yukon Gold or Russet potatoes for best results. Experiment with different cheeses for variety.
