Ingredients

  • 2 lbs russet potatoes (peeled and thinly sliced)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk (warmed)
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese (shredded)
  • 1/2 cup Parmesan cheese (grated)
  • 2 cloves garlic (minced)
  • 1/2 tsp salt (more to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp paprika (optional, for color)
  • 1 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with butter or nonstick spray.
  3. In a medium saucepan over medium heat, melt the butter.
  4. Whisk in the flour and cook for about 1 minute until lightly golden.
  5. Slowly whisk in the warmed milk and cream until smooth and combined.
  6. Stir in minced garlic, salt, black pepper, and paprika. Cook until the mixture thickens slightly, about 5 minutes.
  7. Remove the sauce from heat and stir in 1 1/2 cups cheddar cheese and 1/4 cup Parmesan cheese until melted and smooth.
  8. Arrange half of the sliced potatoes evenly in the prepared baking dish.
  9. Pour half of the cheese sauce over the potatoes.
  10. Layer the remaining sliced potatoes on top and pour the rest of the cheese sauce over them.
  11. Sprinkle the remaining cheddar and Parmesan evenly on top.
  12. Cover the baking dish with foil and bake for 40 minutes.
  13. Remove the foil and bake for an additional 20 minutes until the potatoes are tender and the top is golden brown.
  14. Let the dish rest for 10 minutes before serving, then garnish with chopped parsley for a touch of color.

Notes

For a crispy topping, leave the dish uncovered during the last few minutes of baking. Customize flavors by adding herbs or different cheese varieties.
