- 2 lbs russet potatoes (peeled and thinly sliced)
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups whole milk (warmed)
- 1 cup heavy cream
- 2 cups sharp cheddar cheese (shredded)
- 1/2 cup Parmesan cheese (grated)
- 2 cloves garlic (minced)
- 1/2 tsp salt (more to taste)
- 1/4 tsp black pepper
- 1/4 tsp paprika (optional, for color)
- 1 tbsp fresh parsley (chopped, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with butter or nonstick spray.
- In a medium saucepan over medium heat, melt the butter.
- Whisk in the flour and cook for about 1 minute until lightly golden.
- Slowly whisk in the warmed milk and cream until smooth and combined.
- Stir in minced garlic, salt, black pepper, and paprika. Cook until the mixture thickens slightly, about 5 minutes.
- Remove the sauce from heat and stir in 1 1/2 cups cheddar cheese and 1/4 cup Parmesan cheese until melted and smooth.
- Arrange half of the sliced potatoes evenly in the prepared baking dish.
- Pour half of the cheese sauce over the potatoes.
- Layer the remaining sliced potatoes on top and pour the rest of the cheese sauce over them.
- Sprinkle the remaining cheddar and Parmesan evenly on top.
- Cover the baking dish with foil and bake for 40 minutes.
- Remove the foil and bake for an additional 20 minutes until the potatoes are tender and the top is golden brown.
- Let the dish rest for 10 minutes before serving, then garnish with chopped parsley for a touch of color.
Notes
For a crispy topping, leave the dish uncovered during the last few minutes of baking. Customize flavors by adding herbs or different cheese varieties.
