- 2 pounds baby potatoes
- 1 cup shredded cheese (cheddar or your favorite)
- 1 packet ranch seasoning mix
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine the potatoes, olive oil, ranch seasoning, salt, and pepper. Toss until the potatoes are evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes or until golden brown and tender.
- Remove from the oven and sprinkle the shredded cheese on top.
- Return to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.
- Garnish with fresh parsley if desired and serve warm.
Notes
For added flavor, consider using different kinds of cheese or adding crumbled bacon or garlic powder to the mix.
