Description

A delightful combination of pasta and taco flavors, this Cheesy Taco Pasta is a comforting dish perfect for family dinners.


Ingredients

  • 1/2 pound large shells pasta
  • 1 tablespoon canola oil
  • 1 pound ground beef
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • 2 tablespoons taco seasoning
  • 1/2 teaspoon dried oregano
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon red pepper flakes
  • 3/4 cup water
  • 1 cup jarred salsa
  • 1 1/2 cups cheddar cheese (shredded)
  • Salt and pepper to taste
  • Cheese for topping
  • Crushed tortilla chips for crunch
  • Sour cream to serve
  • Chopped parsley for garnish

Instructions

  1. Cook the large shells pasta according to the package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the canola oil over medium-high heat and add the ground beef. Brown the meat, breaking it apart until no longer pink.
  3. Drain excess fat, leaving about 1-2 tablespoons, and then add the diced onion and minced garlic. Cook for about 1 minute.
  4. Add taco seasoning, dried oregano, Worcestershire sauce, red pepper flakes, and salt and pepper. Pour in 3/4 cup of water and cook until the water evaporates.
  5. Mix in the cooked pasta, jarred salsa, and shredded cheese. Stir until well combined and the cheese is melted.
  6. Serve immediately, topped with extra cheese, crushed tortilla chips, sour cream, and chopped parsley.

Notes

For a spicier version, add more red pepper flakes or jalapeños. You can also substitute the ground beef with turkey or chicken.
