- 4 medium potatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup cooked ground beef or turkey
- 1 packet taco seasoning
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and poke holes in the potatoes, then bake them for about 45 minutes or until tender.
- While the potatoes are baking, brown the ground beef or turkey in a skillet and add taco seasoning according to package directions.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut each potato in half and scoop out some of the insides, mixing it with the cooked meat, cheese, and sour cream.
- Refill the potato skins with the mixture, top with diced tomatoes, chopped green onions, and additional cheese if desired, then return to the oven to melt the cheese.
Notes
For added texture, consider including black beans or corn in the filling. Adjust spices to your taste.
