- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2¼ cups beef broth
- 1 (10 oz) can Rotel
- 2 tablespoons tomato paste
- 1½ cups long-grain white rice (dry, uncooked)
- 2 cups shredded cheese (any variety)
Instructions
- In a large skillet over medium-high heat, add olive oil, ground beef, and onion.
- Cook for about 8-10 minutes until the beef is browned and the onions are translucent. Drain any excess grease from the pan.
- Stir in minced garlic and taco seasoning, cooking for another 30 seconds.
- Add beef broth, Rotel, and tomato paste. Mix well until fully combined and bring to a boil.
- Once boiling, stir in the rice and bring the mixture back to a boil.
- Cover the skillet with a lid, reducing heat to medium-low, and cook for about 15 minutes.
- After the rice has cooked, evenly sprinkle shredded cheese over the top. Allow it to melt for an additional 5 minutes.
- Serve warm with your favorite taco toppings like sour cream, guacamole, pico de gallo, and fresh cilantro.
Notes
For added flavor, consider incorporating diced bell peppers or corn. You can also swap the meat for ground turkey or chicken for a lighter version.
