  • 1/2 cup (120 ml) Beef Sausage
  • 1/3 cup (80 ml) Vegan Parmesan Cheese
  • 1 Egg
  • 1 tsp (5 ml) Garlic Powder
  • 1 cup (240 ml) Shredded Vegan Cheese (topping)

Instructions

  1. Extract as much liquid as possible from the grated zucchini. Refer to the above tips for removing all the moisture.
  2. In a bowl, mix together the grated zucchini, beef sausage, vegan parmesan cheese, egg, and garlic powder. Stir until well combined.
  3. Spread the zucchini mixture evenly in a thin layer, about half an inch thick, on a baking sheet lined with parchment paper to ensure the bottom becomes crispy. Bake at 425°F for 15 minutes.
  4. After baking, sprinkle your preferred shredded vegan cheese on top of the crust. I prefer using a mozzarella or Mexican blend. Return to the oven for an additional 2-5 minutes, just until the cheese melts and turns golden brown.
  5. Cut into pieces and serve immediately while hot.
