- 4 cups (946 ml) Grated Zucchini
- 1/2 cup (120 ml) Beef Sausage
- 1/3 cup (80 ml) Vegan Parmesan Cheese
- 1 Egg
- 1 tsp (5 ml) Garlic Powder
- 1 cup (240 ml) Shredded Vegan Cheese (topping)
Instructions
- Extract as much liquid as possible from the grated zucchini. Refer to the above tips for removing all the moisture.
- In a bowl, mix together the grated zucchini, beef sausage, vegan parmesan cheese, egg, and garlic powder. Stir until well combined.
- Spread the zucchini mixture evenly in a thin layer, about half an inch thick, on a baking sheet lined with parchment paper to ensure the bottom becomes crispy. Bake at 425°F for 15 minutes.
- After baking, sprinkle your preferred shredded vegan cheese on top of the crust. I prefer using a mozzarella or Mexican blend. Return to the oven for an additional 2-5 minutes, just until the cheese melts and turns golden brown.
- Cut into pieces and serve immediately while hot.
