- 1 cup (240 ml) unsalted butter you will be melting this
- 1 cup (240 ml) light brown sugar
- 1 cup (240 ml) granulated sugar
- 2 large eggs
- 1 tablespoon (15 ml) vanilla extract
- 1 1/2 teaspoon (8 ml) salt If using unsalted butter, don’t skip the salt!
- 1 teaspoon (5 ml) baking powder
- 1 tablespoon (15 ml) cornstarch
- 2 1/2 cup (600 ml) s all-purpose flour
- 1 cup (240 ml) butterscotch baking chips I use Nestle Tollhouse
Instructions
- Set your oven to heat up to 350ºF. Make sure to glance at the tips and tricks in the post above for successful baking.
- Melt the unsalted butter in a microwave-safe container or a saucepan until it’s just liquefied.
- In a large bowl, blend the melted butter with the light brown sugar and granulated sugar, stirring until they’re fully combined. It’s best to do this by hand rather than using a mixer.
- Add the eggs and vanilla extract, then mix in the baking powder and salt.
- Incorporate the cornstarch and all-purpose flour, then fold in the butterscotch chips. Ensure the dough is thoroughly mixed.
- Thoroughly grease a metal 9×13 baking dish. If you want to easily remove the bars later, lining the bottom with parchment paper is advisable.
- Press the dough into an even layer in the prepared dish. Scatter some additional butterscotch chips on top for visual appeal.
- Bake for 26-28 minutes, until the edges are lightly golden and the center appears slightly underbaked, which is key for a soft and gooey texture.
- Slice into 12-24 bars, depending on your preference for size, and enjoy the deliciousness. Keep them fresh in an airtight container for 3-4 days.
