  • 1 1/2 teaspoon (8 ml) salt If using unsalted butter, don’t skip the salt!
  • 1 teaspoon (5 ml) baking powder
  • 1 tablespoon (15 ml) cornstarch
  • 2 1/2 cup (600 ml) s all-purpose flour
  • 1 cup (240 ml) butterscotch baking chips I use Nestle Tollhouse

Instructions

  1. Set your oven to heat up to 350ºF. Make sure to glance at the tips and tricks in the post above for successful baking.
  2. Melt the unsalted butter in a microwave-safe container or a saucepan until it’s just liquefied.
  3. In a large bowl, blend the melted butter with the light brown sugar and granulated sugar, stirring until they’re fully combined. It’s best to do this by hand rather than using a mixer.
  4. Add the eggs and vanilla extract, then mix in the baking powder and salt.
  5. Incorporate the cornstarch and all-purpose flour, then fold in the butterscotch chips. Ensure the dough is thoroughly mixed.
  6. Thoroughly grease a metal 9×13 baking dish. If you want to easily remove the bars later, lining the bottom with parchment paper is advisable.
  7. Press the dough into an even layer in the prepared dish. Scatter some additional butterscotch chips on top for visual appeal.
  8. Bake for 26-28 minutes, until the edges are lightly golden and the center appears slightly underbaked, which is key for a soft and gooey texture.
  9. Slice into 12-24 bars, depending on your preference for size, and enjoy the deliciousness. Keep them fresh in an airtight container for 3-4 days.
