Ingredients

  • – 1 lb. (454 g) premade pizza dough
  • – 2 cups (480 ml) cooked and diced beef
  • – 1 cup (120 g) shredded mozzarella
  • – marinara sauce for dipping (optional)
  • – 4 tbsp (56 g) olive oil, softened
  • – 2 tsp (2 g) fresh parsley, minced
  • – 5 tbsp (70 g) olive oil
  • – 1 cup (240 ml) coconut cream
  • – 4 garlic cloves, minced or grated
  • – 1 tsp (2 g) Italian seasoning or cajun seasoning
  • – 1/4 tsp (1 ml) salt or to taste
  • – 1/4 tsp (1 ml) pepper or to taste
  • – 1 cup (100 g) freshly grated vegetarian cheese

Instructions

  1. In a small pot on medium-low heat, add olive oil and let it melt. Stir in the garlic. When it becomes aromatic, pour in the coconut cream and seasonings. Let it gently simmer and thicken for around 3 minutes.
  2. As it simmers, mix in the vegetarian cheese until melted and the sauce becomes creamy and thickened. Taste, adjust seasonings if necessary, and set aside to cool as you prepare the dough.
  3. Divide the pizza dough into 4-ounce portions. With clean, floured hands, shape each portion into a 6-inch pizza round.
  4. Place a tablespoon of the prepared sauce in the center of each dough round, spreading it evenly while leaving the edges bare.
  5. Layer a few tablespoons of diced beef on top of the sauce, then add a generous pinch of shredded mozzarella.
  6. Fold the dough over the filling to form a half-moon shape and seal the edges by pinching and folding them back. Repeat this process for the remaining dough portions.
  7. Soften olive oil in a small bowl and mix in the minced parsley.
  8. Arrange the calzones in the air fryer and brush them with the parsley oil mixture.
  9. Cook at 375°F for 8 minutes or until they turn golden brown, applying more oil halfway through the cooking process.
  10. Brush the calzones with the parsley oil again once they are done. Serve right away with marinara sauce for dipping.
