  • – 2 cups (480 ml) milk
  • – 1 batch homemade onion soup mix, or one envelope Lipton onion soup mix
  • – 1 1/2 cups (170 g) shredded cheddar cheese, divided
  • – 3 thick boneless skinless chicken breasts, or thighs
  • – salt and freshly ground black pepper

Instructions

  1. Set your oven to a temperature of 350 degrees Fahrenheit to preheat. Lightly coat a 9×13-inch baking dish with a non-stick spray to prevent sticking. Put it aside for later use.
  2. In a mixing bowl, combine the rice, cream of chicken or mushroom soups, milk, water, and onion soup mix. Stir them together until well mixed. Transfer this mixture into the prepared baking dish. Scatter half of the shredded cheddar cheese over the top.
  3. Place the chicken breasts or thighs into the rice mixture, making sure they are nestled well. Cover the dish tightly with aluminum foil, as it will be quite full, and place it in the oven. Bake for 1.5 to 2 hours, or until the rice is soft and the chicken is fully cooked. Typically, it takes 1.5 hours, but the time may vary based on your oven and other factors.
  4. Once done, take the dish out of the oven and sprinkle the rest of the cheese on top. Let it sit and cool for 15 to 20 minutes before serving.
