- 2 cups shredded cheddar cheese
- 6 strips bacon
- Salt and pepper to taste
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 small boneless skinless chicken breasts
- 2 cups uncooked rotini pasta
- 2 tablespoons butter
- 2 tablespoons flour
- 1 tablespoon minced garlic
- 2 cups half and half
- 2 tablespoons dry ranch dressing seasoning mix
Instructions
- Cook the bacon in a large skillet over low heat until crispy. Set aside, reserving drippings in the skillet, and chop the bacon once cooled.
- Prepare the chicken by slicing it into thinner pieces. Season with salt, pepper, onion powder, and Italian seasoning, then sear in bacon drippings over medium-high heat until golden and fully cooked. Allow it to rest and cube.
- Boil the rotini in boiling salted water until al dente. Drain and set aside.
- Make the sauce by returning to the skillet, melting butter, and sautéing garlic. Add flour to create a roux, then gradually stir in half and half. Mix in ranch seasoning and shredded cheddar cheese until smooth.
- Combine the pasta with the sauce, then add the chicken and top with chopped bacon. Serve warm.
