Learn how to make delicious chicken burrito bowls with this easy recipe! Packed with flavor and customizable toppings, perfect for a quick and satisfying meal.

Ingredients

  • – 1/4 cup (60 ml) vegetable oil
  • – 3 tablespoons (45 ml) lime juice
  • – 3 chipotle chilis in adobo sauce, finely chopped, plus 1 1/2 tablespoons (23 ml) adobo sauce
  • – 1 1/2 teaspoons (8 ml) garlic powder
  • – 3/4 teaspoon (4 ml) salt
  • – 1 1/2 pounds (680 g) chicken breast, cut into strips
  • – 1 cup (240 ml) long-grain white rice, rinsed
  • – 1 1/2 cups (360 ml) water
  • – 1/4 teaspoon (1 ml) salt, plus more to taste
  • – 1 lime, zested plus 2 tablespoons (30 ml) fresh lime juice
  • – 1/4 cup (60 ml) chopped cilantro
  • – 1 head romaine lettuce, chopped
  • – 1 cup (240 ml) tomatoes, diced
  • – 1 avocado, chopped
  • – 1 cup (240 ml) frozen corn, thawed
  • – 1 (15-ounce) can black beans, rinsed and drained
  • – 1/2 small red onion, chopped

Instructions

  1. To prepare the chicken, combine the oil, lime juice, minced chilies, adobo sauce, garlic powder, and salt in a large bowl. Add the chicken strips, ensuring they are well coated. Cover and refrigerate for a minimum of 2 hours or up to overnight.
  2. Warm a large skillet over medium-high heat. Take the chicken out of the marinade and place it in the skillet. Stir and cook until fully done, roughly 5 minutes. Set aside.
  3. For the rice, bring water to a boil and add salt and rice. Once boiling, lower the heat, cover the pot, and let it simmer until the rice absorbs the water and becomes tender, about 15-18 minutes. Uncover, fluff with a fork, and mix in the lime zest, lime juice, cilantro, and more salt if needed.
  4. To put it all together, layer the rice and lettuce at the bottom of a serving dish. Arrange the cooked chicken on top, followed by diced tomatoes, chopped avocados, corn, black beans, and red onions.

Notes

  • For a more flavorful rice, enhance the taste by adding a hint of cumin or chili powder to the cooking water.
  • Customize the toppings with your preferred ingredients such as shredded cheese, sour cream, or salsa.
  • To make this dish vegetarian, swap the chicken with tofu or your choice of plant-based protein.
