Description

Delicious homemade chicken egg rolls filled with savory chicken, cabbage, and carrots, wrapped in a crispy exterior.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound raw chicken breast, diced
  • 2 cups shredded cabbage
  • 2 cups shredded carrots
  • 3 green onions, chopped
  • 2 tablespoons teriyaki sauce
  • 16 egg roll wrappers
  • Vegetable oil (for frying)
  • Sweet and sour sauce (optional, for serving)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add in the diced chicken and cook until the edges turn golden brown.
  3. Incorporate the shredded cabbage, carrots, and chopped green onions into the skillet. Cook for another 5 minutes, ensuring the chicken cooks through and vegetables remain crisp-tender.
  4. Stir in 2 tablespoons of teriyaki sauce and let it simmer for another 2-3 minutes, allowing the flavors to meld.
  5. Take one egg roll wrapper and position it in a diamond shape. Add about 3 to 4 tablespoons of the chicken and veggie mixture in the center.
  6. Fold the bottom corner of the wrapper over the filling. Then fold the two side corners over the center and continue to roll the egg roll tightly. Brush the edges with water to seal them.
  7. Repeat the process with the remaining filling and wrappers.
  8. In a deep pot, heat 2 inches of vegetable oil to 375°F.
  9. Fry a few egg rolls at a time, turning them occasionally for even cooking. Cook until the wrappers are golden brown and the filling is cooked through—about 3 to 5 minutes.
  10. Transfer the egg rolls to a baking sheet lined with paper towels to drain excess oil.

Notes

For the crispiest egg rolls, use fresh vegetables and consider pre-chopping ingredients a day in advance. Experiment with different dipping sauces.
