- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon fresh parsley (optional for garnish)
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil (optional)
Instructions
- Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, stirring constantly, until fragrant.
- Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and cook for 3-5 minutes, allowing the sauce to thicken slightly.
- Stir in the grated Parmesan cheese, then season with salt, pepper, and optional dried basil. Continue to cook for another 1-2 minutes, until the cheese melts into the sauce.
- Return the cooked chicken breasts to the skillet with the sauce. Spoon the sauce over the chicken to coat. Let everything simmer together for another 2-3 minutes.
- Garnish with fresh parsley and serve hot with your favorite sides.
Notes
For convenience, frozen spinach can be used; just make sure to thaw and drain it thoroughly.
