A delightful Chicken Florentine featuring tender chicken breasts in a creamy, garlicky spinach sauce, perfect for family gatherings or weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley (optional for garnish)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and onion powder.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, stirring constantly, until fragrant.
  4. Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and cook for 3-5 minutes, allowing the sauce to thicken slightly.
  6. Stir in the grated Parmesan cheese, then season with salt, pepper, and optional dried basil. Continue to cook for another 1-2 minutes, until the cheese melts into the sauce.
  7. Return the cooked chicken breasts to the skillet with the sauce. Spoon the sauce over the chicken to coat. Let everything simmer together for another 2-3 minutes.
  8. Garnish with fresh parsley and serve hot with your favorite sides.

Notes

For convenience, frozen spinach can be used; just make sure to thaw and drain it thoroughly.
