Ingredients

  • 1 1/2 lb chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp gluten-free 1:1 flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil pasta according to the directions on the box for al dente.
  2. In a small bowl, mix the chicken seasonings: paprika, oregano, garlic powder, thyme, salt, and pepper.
  3. Pound the chicken slightly to thin it out and season both sides with mixed spices.
  4. Heat olive oil in a large skillet over medium heat and sear the chicken for about 5 minutes on each side.
  5. Lower the heat, cover, and cook for an additional 10-12 minutes, until the internal temperature reaches 165 degrees.
  6. Remove chicken from the skillet and place it on a cutting board.
  7. Add butter to the skillet, allowing it to melt completely.
  8. Stir in shallots, garlic powder, and Italian seasoning; simmer for one minute.
  9. Add flour, stirring to scrape the bottom of the pan.
  10. Pour in chicken broth and heavy cream, whisking until a smooth sauce forms.
  11. Add parmesan cheese, stirring until it melts.
  12. Add cooked pasta and toss to coat evenly with the sauce.
  13. Slice the chicken breast and add it to the pasta, gently stirring before serving.

Notes

For best results, use freshly grated parmesan cheese. Adjust seasonings to personal taste and feel free to add vegetables like spinach or sun-dried tomatoes.
