Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 8 oz mushrooms, sliced
  • 1 cup orzo pasta
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 cup Marsala wine or grape juice
  • 2 cups chicken broth
  • 1/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on all sides, about 5 minutes. Remove to a plate.
  3. Add butter to the skillet. Once melted, add mushrooms and cook until browned, about 5 minutes.
  4. Add onion and garlic, cooking until softened, about 2 minutes.
  5. Pour in Marsala wine or grape juice, scraping up any browned bits from the bottom of the pan. Let simmer until reduced by half.
  6. Add orzo pasta and stir to coat in the sauce.
  7. Pour in chicken broth, return chicken to the pan, and bring to a simmer. Cover and cook for 10-12 minutes until orzo is tender and chicken is cooked through.
  8. Stir in heavy cream and Parmesan cheese until creamy and combined.
  9. Garnish with fresh parsley and serve immediately.

  • For a deeper flavor, use Marsala wine. For an alcohol-free version, substitute with grape juice.
  • You can use chicken thighs instead of breasts for more flavor.
