Ingredients
- – 1/2 tbsp (7.5 ml) vegetable oil
- – 2 ribs celery, diced
- – 3-4 large carrots, diced

- – 10 cups (2400 ml) (2.4 liters) chicken stock, or broth
- – 1 tsp (5 ml) salt, to taste
- – 1/2 tsp (3 ml) freshly ground black pepper, to taste
- – 1/8 tsp (1 ml) dried rosemary, or more, to taste
- – 1/8 tsp (1 ml) dried thyme
- – 1/8 tsp (1 ml) crushed red pepper flakes
- – 1 batch homemade egg noodles, or 4 cups (960 ml) dry egg noodles, farfalle or other bite-size pasta
- – 3 cups (720 ml) cooked chicken, shredded
- – 1 tsp (5 ml) vegetable bouillon, (or more, as needed), or chicken bouillon granules
Instructions
- Pour vegetable oil into a large pot and heat over medium-high flame. Add chopped celery and carrots, stirring for about 3 minutes. Incorporate minced garlic and stir for another 30 seconds.
- Pour in the chicken stock and flavor it with rosemary, thyme, crushed red pepper flakes, and salt. Make sure to taste the broth before adding more salt and pepper. Adjust the taste with vegetable bouillon or chicken bouillon granules as necessary.
- Heat the broth until it starts boiling. Introduce the noodles, whether homemade or store-bought, and cook until they are just firm to the bite.
- If you’re using a store-bought variety, be careful not to overcook them. Take the pot off the heat immediately once the noodles are slightly tender, as they will continue to soften even after being removed from the heat source.
- Mix in the shredded cooked chicken. Sample the broth again and adjust the seasonings if it’s required.
- Keep any extra soup in a sealed container in the fridge for up to 4-5 days, depending on the freshness of the chicken used.
